Atlantic Pomfret (scientific name ‘Brama Brama’) is a deep water species known to live as deep as 3000 feet. They are caught as by catch in those targeting swordfish at deep depths.

Pomfret is cleaned of all meat and broken down in preparation for degreasing which take months.

Once degreased the bones need to be put back into place in preparation for their final placement set in an epoxy resin.
